L'Hibiscus, Grand Case, St. Martin Restaurant of the Month
Fine French Cuisine infused with the flavor of the islands is how Chef Thierry Delaunay describes the food he creates at this restaurant in Grand Case.
Housed in an authentic Creole cottage, L'Hibiscus offers an intimate dining experience. The restaurant is a favorite of locals and visitors who appreciate its eclectic menu and unusual flavor combinations.
Diners begin each meal with a complimentary appetizer chosen by the chef. The menu also features a wonderful selection of starters such as cream of pumpkin soup, mushroom stew, foie gras, sea scallop salad with citrus and thyme, tuna carapaccio with citrus fruit, and lobster ravioli.
The main courses cover the gamut from freshly prepared fish and seafood to sweetbreads, pigs' feet, and escargots to pasta dishes, beef tenderloin, and coq au vin. There is something here for everyone. Most entrees are remarkable for their interesting combination of flavors. There's beef tenderloin with tomato sauce and hot pepper sauce served with baked chayote as well as braised lamb chops flavored with Caribbean five peppers and accompanied by sweet potato pancakes. Seafood lovers may want to try the grilled red snapper with vanilla sauce, the grilled bass with anise sauce, tomato pulp, and fennel, or the grilled lobster flamb?ed with rum sauce and served with Creole rice.
Even the dessert menu is unusual. Rather than serving one creme brulee, L'Hibiscus offers patrons an assortment of five different creme brulees to sample--rose, coffee, vanilla, mint, and banana. There's also an aged rum souffl? with vanilla ice cream, coconut-crusted banana "eggroll" with cocoa flavor, and an assortment of various chocolate desserts that includes creme brulee, ice cream, mousse cake, brownies, and souffl?. The most unusual dessert is the tomato shell dessert. A tomato shell is baked then stuffed with walnuts, covered in caramel, and surrounded by real vanilla ice cream. If you are planning on trying this dessert, order it at the beginning of your meal since it takes some time to prepare.
The restaurant has an extensive wine list and the knowledgeable staff can help you select the right wine to complement your meal. L'Hibiscus is open for dinner only, and reservations are recommended.
