New Princess Juliana International Airport Terminal Open

The long-awaited new terminal at the Princess Juliana Airport opened on October 25, 2006. The response to the new facility has been overwhelmingly positive. The spacious four-level facility has smoothed departures and arrivals on the island. Visitors now have access to additional check-in counters and processing areas. Other visitor amenities have been expanded or enhanced as well. The sleek, modern terminal now offers banking and ATM terminals, postal facilities, Internet access, customer information booths, and increased parking. While waiting to board their planes, passengers can relax in the comfortable departure lounge, spend time in the VIP lounge, or shop in the airport mall. The new shopping area features both local and international brand-name stores. The terminal has expanded its dining options as well. These include Zee Best, Made in Japan Teriyaki Experience, Quiznos Subs, Caribbean Bar & Grill, Auntie Anne's Hand-Rolled Pretzels, and the Rum Jumbie Bar.

Queen Beatrix of the Netherlands officially christened the new US$87 million terminal on November 10. The airport is named for her mother. Demolition of the old terminal is already underway to make way for a new private jet parking area. A separate building is being built here to allow these travelers to bypass the commercial terminal, offering them privacy and convenience. The building will feature three private lounges as well as other amenities.

The airport was built in 1942 as a military base. In 1943, the base was converted into a civilian airport and the terminal was built. Today, the Princess Juliana International Airport is one of the busiest in the Caribbean. The new terminal will accommodate 2.5 million passengers, a substantial increase from the 1.2 million capacity of the old terminal.

Restaurant of the Month - Dare to Be Rare, Cupecoy, St. Maarten

Dino Jagtiani has made quite a splash in the island's dining scene. His restaurant Temptation received plenty of notice from the travel and food magazines, he and his team of chefs brought home the gold in the 2005 Taste of the Caribbean Competition, and his newest restaurant Dare to Be Rare has established itself as a great steakhouse.

Located next to the Atlantis Casino in Cupecoy, Dare to Be Rare is a classic steakhouse serving top-quality steaks and burgers in a fabulous space. Tantalizing appetizers include crab stuffed portabello mushrooms on a bed of arugula with balsamic caramel, fried Brie sticks with a pineapple aioli, warm spinach artichoke dip, tempura shrimp cocktail, oysters Rockefeller, jumbo lump crab cake and a velvety lobster bisque.

Steaklovers will be impressed by the array of choices. Dare-to-be Rare is known for the size of its portions and the quality of its steaks. The menu features both dry- and wet-aged steaks, and there's even a dry- and wet-aged steak combo. Choose from a 16-ounce strip, 16-ounce bone-in KC strip, 20 ounce cowboy-cut bone-in rib eye, or wet-aged filet mignon. Dare to Rare claims to be the only restaurant serving both wet- and dry-aged steak on the same platter, in this case a 16-ounce dry-aged bone in KC strip steak and an 8-ounce wet-aged filet mignon. Steaks are served with your choice of sauce: Bernaise, chimi-churri, spicy peanut, wasabi hollandaise, six peppercorn demi-glace, red wine-mushroom ragout, chipolte spiced ketchup, horseradish cream, blue cheese.

Diners will find a Kobe burger on the menu as well as grilled veal chops and teriyaki-glazed rack of ribs. Seafood lovers aren't forgotten: there's a Dover sole in a lemon butter accented with parsley oil, and whole capers on the menu as well as a whole Maine lobster accompanied by three flavored butters: lemon, garlic, and basil. Other choices include king crab legs, shrimp scampi with sun-dried tomato pesto, white wine, and fresh oregano, or organic chicken tikkas (boneless chicken thighs in tandori spices baked in a clay oven).

The restaurant is known for its sides: sweet potato fries, polenta fries, mashed potatoes with truffles or wasabi, au gratin sweet potatoes or potatoes with garlic rosemary butter. Vegetable choices are just as extensive.

Portions are ample but try to leave a little room to savor the delectable desserts. The menu features creme brulee cheesecake, brown butter pound cake with strawberries and Grand Marnier whipped cream, banana split of tempura bananas, vanilla ice cream, caramel sauce, and whipped cream, and deep dish pecan pie with vanilla ice cream and a berry coulis.

Reservations are a must at this popular steakhouse. For reservations at Rare or Temptations: caribbeanedge.com/st_maarten/restaurants/temptation.html
